Why have I lost the carrier?

Hello  My iPhone 5c has lost the EE carrier. I have contacted EE who tell me its a Apple issue. I have tried what they suggested, backing to icloud and plugging into iTunes with no avail. EE tried my SIM into another phone and reported no issue. They suggested I updated the IOS but I am receiving a error message activation server unavailable despite several attempts. Any suggestions as to what I can try next? Thank you!
